This homemade red iced tea with mint is a breeze to make which is great if you are looking for an easy and quick way to cool down from the sizzling hot summer.
I am a tea drinker so we usually keep boxes of various teas at home. My usual morning tea would be Earl Grey with milk and sugar, and I do not care if the proper way is to drink it with lemon, which I also do occasionally, but that is how I like my morning tea 😉 . My second fave kind of tea is the red tea which is a mixture of various red fruits, berries and flowers…yes flowers. The one I have at home is a combination of hibiscus, rose hips, apples, and oranges. But other kinds of red tea like the four or five fruit tea would also be perfect. I like its zesty, fruity taste although I usually add some sugar or honey whether I drink it hot or cold.
But since it is too hot for a hot drink, I used my red tea to make this super refreshing Red Iced Tea with mint to cool us down. I used two kinds of mint just because we have them growing in the garden: spearmint and peppermint, but any of the two would do, I have to admit however, I liked the spearmint a little better. The tiny black pearls you see at the bottom are blackcurrants, also from my garden, but not really necessary, they look nice though.
- 3 bags of red tea
- 1 lemon, squeezed
- ½ lemon cut into slices
- sugar or honey (amount depends on personal preference, I used 3-4 Tbsp honey)
- 2 stems fresh mint
- 1 cup boiling water
- 3 cups cold water
- ice cubes
- Add tea bags to the cup of boiled water and steep for 10 minutes.
- Take out tea bags and add sugar or honey and stir until all grains are dissolved.
- Transfer the hot tea in a jar or jug and add the lemon juice, lemon slices and mint leaves. Using a wooden spoon, press some of the mint leaves to help infuse tea with mint flavor.
- Add the cold water and ice cubes and stir.
