Another favorite of mine, crabs cooked in coconut milk made thick and creamy by adding squash and a bit spicy from red or green chili peppers. One of the good things about coming home to Philippines…seafoods! They are easier to get and so much cheaper and most of all you get them fresh too! Specially in our province of Pampanga, where crabs are easily available all year round. Although my mama said that the best time to get really good fatty crabs are on the month of August, you can still get lucky if you know how to pick them. Enjoy with steaming hot rice.

Crabs cooked in coconut milk made thick and creamy by adding squash and a bit spicy from red or green chili peppers.
Ingredients
  • 4-5 pcs crabs
  • 11/2 cup squash, cut into cubes
  • 1 cup long beans (sitaw) or string beans, cut into inches long
  • 1 can (400ml) coconut milk
  • 1 clove garlic, minced
  • 1 medium onion, chopped
  • 2 Tbsp vegetable oil
  • 1-2 pcs red or green chili peppers
  • 1/2 cup water
  • 1/2 tsp salt
  • fish sauce for seasoning
Instructions
  1. In a casserole, place crabs and water, add salt and let simmer until crabs are cooked. Remove from water and cut the crabs into half. Set aside the water and crabs separately.
  2. In a deep pan, saute garlic and onion in oil until tender. Add squash and the water where the crabs were cooked. Let it simmer until the squash becomes tender.
  3. Add coconut milk and continue to simmer until squash is really soft and mushy like puree. Add the crabs, long beans and chili peppers and season with fish sauce. Let it cook for another 10-15 minutes.
