So just imagine, that half of the year it is almost always raining. During this season, and especially when classes/work are suspended due to a typhoon or flooding, people usually pass the time staying in bed and/or eating. For many, this is the perfect time for warm soups and the one of the all time favorite is Sopas (Chicken Macaroni/Noodle Soup).

Hhhmmm…come to think of it, we, Filipinos, really like our soups. I only realize this now that I am living in Germany, where soup is not that commonly eaten except for the Goulash soup now and then, I haven’t seen so much soup around. Try this delicious and hearty Sopas (Filipino Chicken Noodle Soup) recipe that will surely keep you warm and fit for the cold and rainy days!
Ingredients
  • 250g chicken breast or legs
  • 3 cups water
  • 250g elbow, shell or straight macaroni
  • 2 Tbsp butter or margarine
  • 1 medium onion, chopped
  • 1 Tbsp garlic, minced
  • 1 cup bell pepper, chopped
  • 1 cup carrots, chopped
  • 1 stalk celery, chopped-optional
  • 370ml evaporated milk
  • 1 cup Vienna sausage, sliced
  • 2 cups cabbage, chopped
  • 2 tbsp salt or more
  • 1 tbsp pepper
Instructions
  1. Boil chicken breast in 3 cups water. Once cooked, remove from the stock and cut meat into smaller pieces.
  2. In a deep pan, sauté garlic and onion in butter until tender. Add the chicken meat and noodles and cook for 5 minutes stirring from time to time to avoid burning the noodles.
  3. Add the chicken stock to the pan and cover. Once it starts to boil add carrots, bell pepper, and celery and cover again.
  4. Once the noodle is almost cooked, add the milk and sausage and season with salt and pepper. Let it simmer for a few minutes more until the noodles are completely cooked and soup starts to thicken. Add cabbage before turning off the stove.
